Dual Baking Day! December 6, 2009

I started out this morning at my in-laws for a cookie baking day. We baked dozen upon dozens of cookies (literally- we baked about 40 dozen bite-sized cookies). They were jello cookies! Yum!


Then I came home & baked the following: Yellow cake mix cookies & Chocolate Devil’s Food Cake Mix Cookies

Blueberry Muffins:

Blueberry Loafs

And finally: Blueberry pancakes (to freeze)

I think it’s a lot for one day, but it was well worth it!

 

For my Sister December 3, 2009

Because I know my sister loves those Mega-Chocolatey Frappucino drinks you get at the coffee shop, I thought I’d share this recipe from Hungry Girl. Have I mentioned how much I love the 200 Under 200 recipe book I bought?

Frozen Fudge Chip Freeze

Ingredients:

One 25-calorie packet diet hot cocoa mix, dissolved in 4 oz. warm water

1 tbsp. sugar-free chocolate syrup

2 oz. light vanilla soymilk

3 no-calorie sweetener packets (like Splenda)

1 tbsp. semi-sweet mini chocolate chips

7 – 8 ice cubes OR 1 cup crushed ice

2 tbsp. Fat Free Reddi-wip (This stuff is my kryptonite!)

 

Directions:

Place cocoa mixture, chocolate syrup, sweetener, chocolate chips, soymilk and ice in a blender. Blend on high speed for 30 – 45 seconds. Pour into an attractive cup, and top with a little Fat Free Reddi-wip. Enjoy! MAKES 1 SERVING

 

Serving Size: entire recipe (12 oz.) with whipped cream

Calories: 142

Fat: 4.5g

Sodium: 194mg

Carbs: 23g

Fiber: 1.5g

Sugars: 13g

Protein: 4g

Recipes:

Cranberry Vanilla Muffins

1 basic muffin mix (recipe here)

6 oz (approx. 1 ½ cups) cranberries

2 tbl. Vanilla (I like a strong vanilla flavor!)

¼ cup sugar

Mix up a basic muffin mix & add additional ingredients. Bake as directed in muffin mix recipe.

Pigs-in-a-Blanket

1 pkg Lil’Smokies

1 or 2 cans of little biscuits

Wrap a biscuit around a Lil Smokie and pinch together. Place approx. 1 in apart on cookie sheets. Bake time & temp recommended on the biscuit can.

Homemade Easy Pizza

1 pkg pizza crust mix (or refrigerated crust)

1 jar pizza sauce

1 pkg mozzarella cheese

toppings to suit

Follow directions on crust mix. Add pizza sauce to taste. Add cheese. Add any other toppings. I like to add a sprinkle of Italian Seasoning to mine as well. Bake at temp directed on crust mix.


Homemade Cranberry Sauce

1 pkg (12 oz) cranberries

1 cup water

1 cup sugar

Heat water & sugar to boiling. Add cranberries. Heat to boiling again. Remove from heat & cool to room temperature. Store in refrigerator until ready to serve.

Shelf Life Guide November 7, 2009

I am terrified of using food that is expired. I can never tell when it’s still good or not. Plus all those “sell by, expires on, use by, and number codes” have me all confused. If it says “sell by” do I need to consume it by then or is it good after that?

If you are like me, you will totally love this website a friend sent me the link to! It’s called “Still Tasty” and it explains all of that! Plus it’s got a great little “Keep It or Toss It” guide! Yeah- now I can stop calling up my mom every meal asking if she thinks my eggs are still good!

Mini Baking Day! October 10, 2009

Inspired by www.moneysavingmom.com, I had my own little baking day today. I actually managed to get all of this done while BabyDoll was taking a nap so it made it a lot easier! Here was my to-do list:

To freeze- muffins (3 kinds), waffles, cake mix cookies

For pantry- homemade mixes for pancakes & biscuits

For tonight (we’re having Bubba’s home-birthday party)- chili & a cake

I managed to get all of it done except for the cake mix cookies! (I’m a bit under the weather so I have to take a rest before the company tonight!) I don’t have pretty pictures like moneysavingmom does, but maybe next time I’ll feel more up to it!

I love to do baking days because it gets it all done at once & then I get to take a break for a week or so! It also helps with sticking to my menu plan and for those unexpected times when I get sick (like now). It saves us from just saying “Mommy’s sick, let’s order pizza.” (Though we do that sometimes as a treat!) Now, I’m off to take a nap & hope the ibuprofen kicks in before all the company comes!
